Roasted Red Okra Tomato Salad

MARKET Ingredients: 

  • 1 pint fresh red okra, sliced into 1/2 inch thick pieces (@BernhardtFarms(

  • 1 cup cherry tomatoes, cut into quarters  (@BernhardtFarms, @HotSpellFarm)

  • 1/2 cup finely diced sweet peppers (@Emadi_Acres_Farm)

  • 1/4 cup finely diced white onion (@vrdnt.farm)

  • 2 Tbl finely diced jalapeño (@HotSpellFarm)

  • Cilantro, finely chopped  (@HotSpellFarm)

  • Sea Salt Crackers, for serving (@The_Sourdough_Project)

Other Ingredients:

  • 3 Tbl high heat oil (canola, avocado) 

  • 2 tsp cajun seasoning blend

  • 2 Tbl lime juice

  • Salt & pepper, to taste

Directions:

  1. Heat a large shallow pan to high heat with 2 Tbl olive oil. When the oil is hot, add the cut okra in a single layer. Sprinkle over with seasoning mix, salt, and black pepper. Drizzle over another 1/2 Tbl oil.

  2. Let cook, stirring frequently for 10 minutes, or until the okra is lightly browned in places. Adjust seasoning to taste. Transfer to a layer of paper towels to absorb any excess oil, if needed, and serve hot.

  3. Toss together with remaining ingredients and serve with chips, crackers, or scoop up as a salad!
