Peaches and Cream

MARKET Ingredients: 

  • 4-5 fresh peaches, finely diced (@LightseyFarms)

  • Plain Greek yogurt (@MotherCulturesa)

  • 2 Tbl honey (@RoundRockHoney)

  • Mint, chopped  (@VermillionFarms_)

  • Graham Crackers (@The_Sourdough_Project)

Directions:

  1. Prepare the peach puree. Gather about two thirds of the diced peaches, (setting aside the remaining one-third for topping the parfaits later) and add to a small saucepan over low heat. Pour in just enough water to barely cover the peaches, then stir in 2 tablespoons of honey. Simmer gently for 5–7 minutes, until the peaches are soft and fragrant. Optional — add in 2 tsp cinnamon for extra flavor. 

  2. Prepare the Graham Crackers — Crush the graham crackers into coarse crumbs using your hands or by pulsing them lightly in a food processor. Transfer to a bowl and set aside

  3. Blend Peaches — Remove the peaches from the heat and let cool slightly. Using an immersion blender, blend until smooth and creamy. If you prefer a chunkier texture, pulse only a few times.

  4. Assemble the Parfait — Layer yogurt, peach purée, graham cracker crumbs, and the reserved fresh peaches into serving glasses or bowls. Finish with a sprig of mint and a drizzle of honey. Serve immediately for a fresh breakfast or an easy sweet treat!!
