Hibiscus Ginger Beer salad Dressing Over SPring Greens

MARKET Ingredients: 

  • 1/3 cup Hibiscus Ginger Beer (@SocoGingerBeer)

  • 1 large bag spring mix (@BouldinFoodForest)

  • 1/2 cup sugar snap peas, chopped (@BouldinFoodForest)

  • 1 fennel, bulb and stems finely chopped (@Emadi_Acres_Farm)

  • 1/2 cup radish, sliced thin (@Emadi_Acres_Farm)

  • 2 Tbl mint, finely chopped (@Simple_Promise_Farms)

Other Ingredients: 

  • 3 Tbl olive oil

  • Salt and pepper, to taste

Directions:

  1. Make the dressing. In a small bowl or mason jar, combine the olive oil, kombucha, mint, tops of fennel, salt and black pepper. Stir or lightly shake to emulsify (ginger beer is fermented so it quickly fizzles). Season with salt and pepper to taste. 

  2. Prep the veggies. Thinly slice fennel bulb and radish, then roughly chop snap peas. 

  3. Toss. Pour the salad dressing over the greens, transfer in the veggies, and toss to ensure all greens and toppings get lightly coated. Enjoy!
