Sour Plum and Cucumber Salad

MARKET Ingredients: 

  • 6 sour green plums (@lightseyfarms)

  • 3 large cucumbers (or 6 small), peeled and de-seeded (@simple_promise_farms)

Other Ingredients:

  • 4 Tbl minced fresh ginger

  • 3 Tbl minced fresh garlic

  • Juice of 2 limes

  • 1/3-1/2 cup olive oil

  • 1 Tbl granulated sugar

  • Salt to taste

Directions:

  1. Slice the sour plums into 1/4-inch slices, into a large bowl. Slice the peeled and de-seeded cucumbers into the same bowl, set aside.

  2. In a small bowl, whisk together olive oil, fresh lime juice, minced fresh ginger and garlic. Add the sugar and salt to taste.

  3. Combine the dressing with the plums and cucumbers. Allow the salad to sit for 20-25 minutes to allow the flavors to meld together. Adjust the seasoning to taste and serve.
