Pesto Marinated Tomatoes

MARKET Ingredients: 

  • 3-4 Hot Streak heirloom tomatoes (@B5Farm)

  • Basil Microgreens (@BouldinFoodForest)

  • 2-3 Tbl Carrot Top Pesto (@SouthernStarFarms_tx)

  • 2 Tbsp Orange Vinegar (@LuminariaAcres)

  • Fresh bread, to serve (@TexasFrenchBread)

Other Ingredients: 

  • 3 Tbl olive oil

  • 1 tsp dried oregano

  • 1-2 garlic cloves

  • Salt & pepper

Directions:

  1. Make the marinade. In a small bowl, combine the olive oil, vinegar, 1 Tbl pesto, minced garlic, and oregano. Add a small pinch of salt and black pepper. Stir to combine. 

  2. Slice and season the tomatoes.Slice your heirloom tomatoes ¼-½ inch thick and place them nicely on a serving platter or shallow dish in a single layer with slight overlap. 

  3. Garnish. Dollop a generous spoonful of pesto on the layer of tomatoes. Sprinkle the tomatoes with fresh microgreens and finish with salt & pepper. Serve over fresh toasted bread and enjoy!
