Farmers’ Market Wrap

MARKET Ingredients:
1 pound of broccolini (@HotSpellFarm)
1 bunch of white turnips (@SouthernStarFarms_tx)
1 bunch kale (@SouthernStarFarms_tx)
1 bunch fresh basil (@Simple_Promise_Farms)
1 package grass fed butter tortillas (@MesocanoFoods)
Other Ingredients:
2 Tbl olive oil
Salt & pepper
Directions:
Chop broccolini into bite size pieces and saute for 2-3 minutes in olive oil. Add to a large bowl.
Peel and slice white turnips. Saute briefly in olive oil and add to the bowl with broccolini.
Chop kale and saute for about 2-3 minutes, until wilted but still bright green. Julienne the fresh basil and add to the bowl, along with sauteed kale.
Add a pinch of salt and pepper and toss the contents of the bowl and adjust seasoning, as necessary (use your favorite seasoning here).
Heat tortilla in a pan. When heated through, place ½ cup of the vegetable mix in the center of the tortilla and evenly distribute. Roll the tortilla tightly.
Serve as is, or crisp in more olive oil on both sides.
Pro tip: spread your favorite hummus on the tortilla before adding the veggies, top with cheese, and/or add a protein like sliced turkey to make this your own!
