Watermelon, Peach & Goat Feta Salad

MARKET Ingredients: 

  • 3 cups chopped watermelon (@lightseyfarms)

  • 2 peaches, sliced (@lightseyfarms)

  • 1 cucumber, chopped (@b5farm)

  • 1 cup chopped tomatoes (@simple_promise_farms)

  • ¼ cup fresh sweet basil leaves, stems removed (@hotspellfarm)

  • Goat milk feta cheese, crumbled (@purelucktexas)

Other Ingredients:

  • Extra virgin olive oil

  • Salt & pepper, to taste

Directions:

  1. In a large bowl, combine the watermelon, peaches, cucumber, and tomatoes. Add the basil leaves and gently toss to combine.

  2. Season with salt and black pepper to taste. Crumble the goat feta over the top of the salad.

  3. (Optional) Cover and refrigerate for at least 1 hour to allow the flavors to marinate.

  4. Just before serving, drizzle lightly with extra virgin olive oil. Serve chilled and enjoy!
