Stewed Tomato & Spinach Vodka Dipping Sauce

Market Ingredients: 

  • 2–3 medium heirloom tomatoes, roughly diced (@growtopiatx)

  • 1 1/2 cups Japanese spinach (@bouldinfoodforest)

  • 1 packet vodka sauce, thawed (@pastaonetwothree)

  • Fresh focaccia, torn or cut into pieces (@texasfrenchbread)

OTHER Ingredients: 

  • 2 Tbl olive oil

  • Salt

  • Black pepper

Directions:

  1. Stew the tomatoes: Heat the olive oil over medium heat in a small saucepan. Add the diced tomatoes, season with salt and pepper, and cook for about 5 minutes, or until softened and slightly reduced. Remove from heat.

  2. Heat the sauce: Pour the vodka sauce into a large, shallow skillet. Add the stewed tomatoes and fresh spinach. Simmer for 10–12 minutes, stirring occasionally, until the spinach has wilted and the sauce is well combined.

  3. Serve: Spoon the sauce into a shallow serving dish and serve with fresh focaccia for dipping.
    Optional: Toast the focaccia pieces in a pan and sprinkle on top like croutons!
