Miso Poblano Vegetable Soup

Market Ingredients: 

  • 6 carrots, peeled and diced (@simple_promise_farms)

  • 1 poblano pepper, de-seeded and diced (@b5farm)

  • 1 bunch Swiss chard, roughly chopped (@simple_promise_farms)

  • 4 medium tomatoes, diced (@southernstarfarms_tx)

Other ingredients:

  • 4 Tbl red miso paste

  • 1 Tbl olive oil

  • 4 cups vegetable broth

  • Salt

  • Pepper  

Directions:

  1. Heat olive oil in a large soup pot or Dutch oven over medium heat. Add carrots, poblano pepper, and tomatoes along with a pinch of salt and pepper and sauté until soft and tomatoes are broken down a bit.

  2. Pour in vegetable broth. Bring to a boil, then add chard and reduce to a simmer. Simmer for 25 minutes.

  3. Remove from heat. Dissolve miso paste into 4 Tbl warm water (not boiling), then pour into pot. Ladle into bowls and serve. Pro tip: adding the miso paste once the soup is off the heat will prevent the beneficial probiotics from being killed!
