Hot Honey Carrots with Scallion Yogurt Spread

MARKET Ingredients:
1 bunch of carrots, washed and de-stemmed (@simple_promise_farms)
2-3 Tbl finely chopped green onion (@simple_promise_farms)
2-3 Tbl finely chopped scallions (@simple_promise_farms)
4 Tbl Miel Picante honey (@roundrockhoney)
Plain yogurt spread (@motherculture)
Other Ingredients:
2 Tbl olive oil
Salt & pepper, to taste
Directions:
Cut the carrots into small, bite-sized pieces.
Sauté the carrots: Heat olive oil in a large skillet over medium-low heat. Add the carrots and season with salt and pepper. Spread them into a single layer.
Sear and cook: Let the carrots cook undisturbed for 5–7 minutes, until lightly browned on the bottom. Flip, then add the scallions and drizzle 2 tablespoons of hot honey over the top. Cover and cook for another 5 minutes, or until the carrots are fork-tender. Remove from heat.
Prepare the yogurt base: In a small bowl, mix the yogurt spread with the green onions. Season with salt and pepper.
Assemble and serve: Spread the yogurt mixture onto a serving dish. Top with the warm glazed carrots. Garnish with additional green onions and a drizzle of hot honey. Serve immediately.
