Market Recipe: Whipped Ricotta with Spring Herbs

Featured Ingredients: 
  • 8 ounces fresh ricotta – @lira_rossa
  • 1 bunch radishes, thinly sliced – @simple_promise_farms
  • 2-3 sprigs fresh dill – @simple_promise_farms
  • Fresh rosemary leaves – @vrdnt.farms
  • Fresh baguette – @texasfrenchbread
Other Ingredients:
  • 2 lemons, juiced (reserve the zest of 1 lemon)
  • 2 tablespoons honey
  • 1 teaspoon garlic (fresh or ground)
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
Directions: 
  1. Remove the rosemary and dill leaves from their stems and set them aside with the lemon zest.
  2. In a food processor or using an immersion blender, combine the ricotta, lemon juice, lemon zest, fresh herbs, garlic, honey, salt, and pepper. Blend until smooth and slightly fluffy.
  3. Transfer the whipped ricotta to a serving bowl and garnish with extra rosemary leaves and a light drizzle of honey.  
  4. Serve with thinly sliced radishes for dipping and/or spread onto thick slices of fresh baguette
