Market Recipe: Whipped Ricotta with Spring Herbs

Featured Ingredients:
- 8 ounces fresh ricotta – @lira_rossa
- 1 bunch radishes, thinly sliced – @simple_promise_farms
- 2-3 sprigs fresh dill – @simple_promise_farms
- Fresh rosemary leaves – @vrdnt.farms
- Fresh baguette – @texasfrenchbread
Other Ingredients:
- 2 lemons, juiced (reserve the zest of 1 lemon)
- 2 tablespoons honey
- 1 teaspoon garlic (fresh or ground)
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
Directions:
- Remove the rosemary and dill leaves from their stems and set them aside with the lemon zest.
- In a food processor or using an immersion blender, combine the ricotta, lemon juice, lemon zest, fresh herbs, garlic, honey, salt, and pepper. Blend until smooth and slightly fluffy.
- Transfer the whipped ricotta to a serving bowl and garnish with extra rosemary leaves and a light drizzle of honey.
- Serve with thinly sliced radishes for dipping and/or spread onto thick slices of fresh baguette
