Munkebo Farm wrings a lot out of goodness out of their one-acre farm. They pasture-raise cattle and pigs, and use their manure to fertilize their produce, creating a closed-loop system. They incorporate permaculture principles and make use of all the natural cycles in an ecosystem to sustainably produce pork, beef, produce, and various kitchen products they bring to the market. They also like to raise heirloom, rare and unusual varieties of vegetables and fruits, like their beautiful magenta spreen, a relative of spinach. Keep an eye out this month for some tasty winter citrus fruits including Seville oranges and wild lemons as well! Stop by their booth every Saturday at Lakeline and Sunday at Mueller.
