Shaved Carrot Salad

Market Ingredients: 

  • 1 bunch carrots, washed and peeled (@southernstarfarms_tx)

  • 1 bunch green onions, sliced thin (@bernhardtsfarm)

  • 1 tsp honey (@roundrockhoney)

Other Ingredients: 

  • 1 tsp sesame oil

  • Juice of 1 lemon, 1 lime, and 1 orange

  • Pinch of salt

Directions:

  1. Shave carrots into ribbons using a vegetable peeler.

  2. Add sesame oil, honey, citrus juices, and salt to a large bowl, whisk to combine.

  3. Add carrot ribbons and sliced green onion to the bowl with the dressing and toss to coat.

  4. Let sit for 15 minutes to allow the flavors to come together and the vegetables to marinate a bit, then serve.

Tip: This would be great topped with toasted sesame seeds or crushed peanuts!
