Red potato & green bean sauté

Market Ingredients:
2 pints Valore green beans, trimmed - @simple_promise_farms
6-8 small red potatoes - @b5farm
1 small white onion, sliced thin - @bernhardtsfarm
1/2 Thai basil leaves - @bernhardtsfarm
OTHER Ingredients:
3-4 tbsp olive oil
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
Directions:
Dice red potatoes into bite sized cubes and add to bowl with sliced onion.
Drizzle with olive oil and season lightly with salt, pepper, and garlic powder. Toss to coat evenly.
Heat a medium-sized sauté pan over low heat. Once warm, add the potato-onion mixture. Cook for 2–3 minutes, stirring occasionally, until the edges start to brown.
Add a few tablespoons of water to the pan. Cover and cook for 6–8 minutes, or until the potatoes are fork-tender.
Add the trimmed green beans to the pan. Cover again and steam for another 2–3 minutes, or until the beans are bright green and slightly tender.
Turn off the heat and immediately toss in the Thai basil leaves. Let them wilt gently.
Serve warm as a side or pair with your favorite local sausage!
