Big Batch Kale Salad with Kimchi Vinaigrette

Market Ingredients:
3 bunches dinosaur kale, chopped (@simple_promise_farms)
2 bunches baby bok choy, chopped (@hotspellfarm)
5 scarlet carrots, grated (southernstarfarms_tx)
Kimchi Vinaigrette:
4 Tbl kimchi, chopped (@bernhardtsfarm)
2 Tbl kimchi juice
3/4 cup olive oil
1 tsp chili powder
Directions:
Prepare all veggies and toss in a large bowl.
In a small bowl, mix chopped kimchi, kimchi juice, and chili powder. Slowly whisk in olive oil into emulsified.
Pour over veggies and toss to evenly coat.
Serve! This salad is hearty enough for meal prep if you want to make ahead or if you have leftovers.
