by Mueller Market Chef Julia
Market Ingredients:
1 pint plain Greek yogurt (@motherculturesa)
2 cups fresh spinach, de-stemmed and roughly chopped (@emadi_acres_farm)
2 Tbl fresh dill, chopped (@emadi_acres_farm)
Sourdough crackers for dipping (@the_sourdough_project)
GF option: Sliced carrots/cucumber (@southernstarfarm_tx) or (@simple_promise_farms)
OTHER Ingredients:
1/2 lemon, juiced
2 1/2 Tbl olive oil
1 Tbl garlic, minced
Salt and black pepper, to taste
Directions:
Cook spinach: Bring a shallow pan to low heat. Add 2 Tbl of olive oil and minced garlic to the pan with a pinch of salt and pepper. Let cook until garlic browns (about 4-5 minutes), then add chopped spinach and stir occasionally until wilted. Remove from heat and let cool.
Fold in herbs and season: In a bowl with the Greek yogurt, fold in the cooked spinach, along with the chopped dill, lemon juice, and another 1/2 Tbl of olive oil. Mix all ingredients thoroughly and season to taste.
Serve: Chop carrots or vegetable dippers of choice and / or assemble crackers on the side. Garnish the yogurt dip with a drizzle of olive oil plus flaky salt and fresh ground pepper. Enjoy!
