Market Recipe: Fall Tex-Mex Salad


Fall Tex Mex Salad

Serves 4

1 bunch of your favorite green

2 avocados

Juice of 2 limes

¼ red onion, diced

1 cup black beans

2 sweet peppers, diced

1 teaspoon chili powder

1 teaspoon cumin

¼ cup sunflower seeds

¼ cup crushed pecans


In a large bowl, massage the leafy greens with the avocado and lime juice. Add the red onion, black beans, sweet peppers, and season with chili powder and cumin. Divide equally among 4 plates and garnish with sunflower seeds and pecans.
